Meet Agua Mágica’s First High-Proof Mezcal for Cocktails: Espadín Capón

Agua Mágica, in partnership with Frederick Wildman & Sons, announces the launch of its first cocktail-focused expression: Espadín Capón, a bold, 90-proof mezcal crafted specifically for bar programmes.

Made by sixth-generation mezcalero Julio Juan — son of Don Rogelio, the maestro behind Agua Mágica’s flagship sipping mezcal — this new expression reflects a younger, sharper production philosophy: hotter roasting temperatures and distillation timed while fermentation is still active, capturing more lift and complexity. The result: a peppery, single-origin mezcal with bold aromatics and rich structure that holds its own in everything from Spicy Margaritas to Oaxaca Old Fashioneds.

“This product was born from trade feedback — and created with their help,” says Rafa, founder of Agua Mágica. “Bartenders told us what they needed — more proof, more punch, better margins. We created something hand in hand with them.”

Espadín Capón is made in San Juan del Río, Oaxaca from mature Espadín agaves using the traditional capón method — cutting the flower stalk before it blooms to concentrate sugars in the piña. Current market dynamics, including a slowdown in demand and an oversupply of mature agaves, enabled us to craft an exceptional mezcal at an affordable price.

The mezcal is milled with a stone tahona, wild-fermented in open-air pine vats, and double-distilled in copper. It’s proofed with natural mountain spring water to a final 45% ABV (90 proof). 

The new expression joins the portfolio of Frederick Wildman & Sons, exclusive U.S. importer for Agua Mágica and known for representing industry icons like Chartreuse, Armand Rousseau, Pol Roger, and Nino Negri.
