Mandarin Grill welcomes Michelin-Starred Restaurant Alumnus, Chef Marco Caverni

Mandarin Grill returns to its Italian roots and welcomes Chef De Cuisine Marco Caverni, a decorated culinary artist with extensive experience in Italy, China, Singapore, Jakarta, and Seoul.

“Chef Marco’s profile was a perfect match for Mandarin Oriental, Kuala Lumpur. As one of Malaysia’s most prestigious Italian grills, we take pride in finding the right voice to represent what we feel is authentic Italian dining. With Chef Marco’s training in Venice and Milan accompanied by his many years of service in Asia, we believe Chef Marco has the right ingredients to satisfy our customers’ discerning tastes,” said General Manager of Mandarin Oriental, Kuala Lumpur, Christian Tavelli.

The refreshed menu is an amalgamation of Chef Marco’s experiences which has resulted in signature creations inspired from many Venetian traditions. Such as Homemade Squid Ink Tagliolini with lobster and lime, Wagyu Beef Carpaccio with roasted mushroom, cured egg yolk and truffle, or Homemade Ravioli with tiger prawns, saffron and burrata, which are just some of the inventive delicacies that Chef Marco is bringing to Mandarin Grill in 2022.

Alongside charcoal grilled meats such as Dry Aged Argentinian Steak, which is Chef Marco’s signature rosemary smoke steak served with a choice of side dish and sauce. Staying true to Venetian cuisine, fresh seafood inspired by Mediterranean traditions takes centre stage throughout the menu. Diners may also end the night with delectable desserts such as Chef Marco’s Classic Grandma Tiramisu or Pandan Leaf Panna Cotta with Sarawak pepper caramel and marinated mango.

Having earned his stripes working at a 2-star Michelin restaurant, Trussardi Alla Scala, in Milan, a 5-star hotel in Venice, and various other prestigious restaurants in and around Asia, Chef Marco has also found the time to learn Mandarin and Korean. Mandarin Grill is looking forward to delighting its customers with authentic Venetian cuisine and hospitality.
