Le Bristol Paris unveils its new frozen creations.

Within the Palace workshops, Chef Maxence Barbot and his pastry team craft ice creams designed to delight both the eye and the palate. Plucking a strawberry at its peak, revealing the depth of a pistachio, letting vanilla unfold in waves. This is the art of true indulgence.

For the second consecutive year, the Epicerie des Ateliers du Bristol offers its ice creams to go perfect for a stroll along rue du Faubourg Saint-Honoré. The strawberry sorbet is vibrant and intense, bursting with pure fruit freshness, instantly addictive. Every nuance of the fruit is preserved for a bold, luminous flavour. Fior di latte is soft and nostalgic, made with farm cream and fresh milk, lifted by the bright citrus notes of preserved Menton lemons from Maison Saint-Sylvestre. Sicilian pistachio captivates with its depth and velvety texture. Toasted, buttery notes linger on the palate, punctuated by the delicate crunch of caramelised pistachios.

At Café Antonia or in Le Jardin Français, timeless desserts are reinvented with elegance. Strawberry-raspberry vacherin, Dame Blanche beneath their apparent simplicity lies a meringue shell filled with intense frozen heart: strawberry sorbet or Madagascan vanilla.

At L’Epicerie des Ateliers du Bristol, Pastry Chef Maxence Barbot reimagines this timeless classic through a collection of exclusive, limited-edition creations, each conceived as a singular tasting experience. Already iconic, the vanilla–pecan flan has earned its place among Paris’s finest. A perfectly golden, delicately crisp pastry encases a silky vanilla custard, enriched by a subtly toasted pecan praline that lingers with quiet elegance. Both comforting and refined, it has become a benchmark, never excessive, always precise. Yet Maxence Barbot pushes further, transforming this classic into a series of bold and ephemeral interpretations from the pistachio flan to the chocolate iteration.
