A French and Italian-inspired culinary affair with a Malaysian twist.
Element by Westin Kuala Lumpur’s sky-high dining destination, TRACE Restaurant & Bar, is elevating its 10-Course Chef’s Tasting Menu with a brand-new theme—“Fresco Affair.” Available from January to June 2025, every Saturday, Sunday, and Public Holiday from 12:30 PM to 3:00 PM, diners can indulge in an exquisite culinary journey set against breathtaking city views.
Curated by Senior Sous Chef Hasrul Hawari, who brings 16 years of culinary expertise, “Fresco Affair” seamlessly blends French and Italian techniques with Malaysian influences, offering a fusion of bold flavours and refined presentations. Each dish is meticulously crafted to provide a harmonious balance of taste and artistry.

The “Fresco Affair” experience begins with Oyster On The Rock, featuring fresh oysters paired with caviar and citrus balsamic vinaigrette—an invigorating start to awaken the palate. This is followed by the Smoked Salmon Compressed Watermelon Salad, a progressive dish that balances sweet and savoury flavours with arugula, pickled onion, feta, pistachios and a ginger apple cider dressing. Next, the Crispy Battered Calamari is served, perfectly complemented by a bold jalapeño garlic aioli.
A rich and aromatic Ginger Flower-Infused Oxtail Broth, accompanied by toasted focaccia, highlights the unique flavours of Malaysian cuisine. A Palate Cleanser of passion fruit sorbet, passion fruit pearls, and a delicate charcoal tuille refreshes the taste buds before the main courses begin.
The indulgence continues with the Poached Cod Fish, elegantly paired with beurre blanc, asparagus and caviar. This is followed by the Chicken Ballotine, showcasing a modern take on classic techniques with layers of chicken spinach mousse, carrot, and mushroom, served alongside garlic butter broccolini and cep mushroom jus. The Lobster Spaghetti then takes centre stage, featuring pan-seared lobster, torch parmesan spaghetti and shaved parmesan for a luxurious touch.
For the final savoury course, the Grilled Lamb Rack delivers robust flavours with cauliflower mousseline, garlic confit and a rich lamb jus. The experience concludes with the Baked Alaska, a showstopping dessert featuring a trio of flavoured ice creams, mixed berry coulis, and microgreens for a sweet and elegant finish.
