Curated by esteemed tastemakers, this exclusive series showcases acclaimed chefs from around the globe, inviting guests to immerse themselves in unparalleled culinary adventures that celebrate the extraordinary. This November, in collaboration with Deluxe F&B Malaysia and Guojiao 1573 from China, The Brasserie presents the exclusive 6-Hands Haute Michelin Night, highlighting the theme Local Harvests, Sichuan Flavours. The evening will showcase a remarkable fusion of local ingredients and Sichuan-inspired culinary artistry. Guests are invited to join an exclusive two-night event featuring three renowned Michelin-starred chefs from Chengdu, China, honouring the essence of authentic Sichuan cuisine. The exquisite six-course menu will be paired with the distinguished National Cellar 1573 Baijiu. Scheduled for 15th & 16th November 2024, each evening offers limited seating, ensuring an intimate and immersive dining experience at The Brasserie.

Xu Xiaohong

 

The esteemed Founder of Art Yinba Restaurant and a distinguished Chinese Culinary Master, is a luminary in the realm of Sichuan cuisine. With a plethora of accolades to his name, including a gold medal at the prestigious Chinese Culinary World Championship in Rotterdam, Chef Xu Xiaohong is celebrated for his pioneering approach to “three-dimensional Sichuan cuisine”. Committed to preserving traditional culinary techniques while embracing modern innovations, he offers diners an unparalleled experience of Sichuan flavours.

As the head of Xu’s Cuisine and a distinguished ambassador of authentic Sichuan flavours, Chef Xu Fan is dedicated to preserving the true essence of Sichuan culinary artistry. His passion has led to the expansion of his acclaimed culinary empire throughout China, featuring several award-winning establishments. From 2022 to 2024, his restaurants have consistently earned Michelin stars, solidifying his status as a champion of Sichuan’s rich gastronomic heritage.

Each dish is prepared with the finest ingredients, thoughtfully sourced to honour Malaysia’s rich agricultural heritage.

Emulsified Garlic Oil Chicken (by Art Yinba) – This exquisite dish showcases aged butter chicken thighs, marinated for two days to achieve unparalleled tenderness and rich flavour. It is complemented by a house-made emulsified garlic sauce, crafted by blending traditional garlic paste at high speed. This technique intensifies the harmonious fusion of garlic and chilli oil, enhancing the overall flavour while carefully balancing taste and fat content.

Special Flavoured Foie Gras (by Xu’s Cuisine) – An exceptional creation from Xu’s Cuisine, this dish presents one of the most distinctive flavour profiles in Sichuan cuisine, artfully blending salty, sweet, spicy, numbing, sour and fragrant elements in perfect harmony. The foundational tastes of sugar, salt, and vinegar come together to form a beautifully balanced medley of salty, sweet and sour flavours. The dish features rich and tender French foie gras, leaving a lasting impression on the palate.

Main Course – Special Flavoured Foie Gras

Silken Moonlight (by Nan Tang Restaurant) – This dish boasts a rich history of over a century and is regarded as one of the most poetic offerings in Sichuan cuisine. As the saying goes, “Close the door to see the moon through the window; throw a stone to reveal the sky beneath the water”. The chefs at Nan Tang Restaurant have infused their creativity and expertise into this dish, shaping fish tofu into a delicate crescent moon without the use of preservatives. The bamboo fungus acts as the window, while the fish tofu forms the crescent moon. The clear broth represents a serene lake, with chive flowers resembling stars in the night sky. The naturally fermented pickled vegetable water imparts a delightful salty-sour flavour. Each spoonful unveils layers of exquisite smoothness.
